Omelet Complete from Brady Inn Bed and Breakfast

The following recipe for omelet complete comes from Brady Inn Bed and Breakfast in Madison, Georgia. The inn has seven guestrooms and is near the University of Georgia in Athens, the Masters in Augusta, and the golf courses of Lake Oconee. Enjoy!

Servings: 1
Prep time: 30 minutes

Ingredients:

  • 2 oz white mushrooms
  • 2 scallions/green onions
  • 2 oz cooked ham, sliced
  • 2 tablespoons butter, divided
  • 3 large eggs
  • 1 tablespoon milk (optional)
  • 1/4 teaspoon salt (optional)
  • 1/8 teaspoon pepper (optional)
  • 2 oz grated Gruyere cheese
  • chopped Italian parsley (optional)


1. Thinly slice mushrooms and green onions. Dice sliced ham. Saute in pan with 1 tablespoon butter for approximately 3-5 minutes. While these saute, wisk eggs in bowl. Add milk, salt, and pepper blending together.

2. Heat a nonstick 8" omelet pan over medium-high, heat melting remaining 1 tablespoon butter while tilting pan to coat entire surface.

3. Pour eggs into pan and cook until they just begin to set. Begin to scramble eggs using a heat-proof rubber spatula. When eggs form soft, moist curds, spread them into an even layer. Sprinkle the Gruyere evenly down the center of omelet. Immediately add mushroom, onion, and ham mixture onto the cheese along the same line. Continue to cook without stirring the omelet for another minute until the omelet is set.

4. Place the edge of the omelet pan on a work surface next to the serving plate. Tilt the pan to one side slightly while using rubber spatula to lift the higher side and fold it over to form a half circle shape. Use spatula to slide omelet onto serving plate. Lightly brush the top of the omelet with any residual butter from the mushroom, onion and ham pan to give the omelet a slight sheen. Sprinkle lightly with chopped Italian parsley.

5. Serve with fruit garnish and favorite whole grain breads.

Review of the Week: Fair Havens Plantation in Arnoldsville, GA

Fair Havens Plantation is a 5,000 square-foot bed and breakfast located in Arnoldsville, Georgia. The inn sits on 30 acres, but it's only an 8-mile drive to the town of Athens. It also holds incredible history; according to the innkeepers, a ball was held in the home in 1825 for the French General Jean Marquis de Lafayette honoring him for his assistance in the American Revolutionary War. This excellent review was written for a stay at Fair Havens Plantation in January 2011.

My husband and I enjoyed a fabulous weekend stay at Fair Havens in December celebrating a special birthday, which Ken and Linda helped me in pulling off a great surprise weekend getaway! Our weekend stay there couldn't have been better. We had the privacy and luxury accomodations we were hoping for, along with some great conversatons with Ken and Linda and some totally scrumptious food!! I don't know how they did it, but they managed to treat us like royalty, but make us feel like part of the family all at the same time. If you get the chance to stay here...you'll be glad you did. We got to see all of the rooms and they are all gorgeous. The history of Fair Havens is so interesting, the food wonderful, the accomodations superb, and you'll be treated with loving care. Thanks again Ken and Linda...we'll be back!

Innkeepers wear pink for breast cancer fundraising

October is Cancer Awareness Month. In a spirit of "Mama Mia" enthusiasm among three innkeeper friends, Savannah cancer survivor Jackie Heinz exemplifies breast cancer's new hope.

Today the owner of Zeigler House Inn, Jackie Heinz -- golfer, caterer, B&B innkeeper, amazing mother, breast cancer survivor and cancer research fund-aiser -- is a vision of energy and creativity.

One chapter of her inspiring story includes a grassroots fundraising initiative in Savannah, Georgia, which began with her own need for new hope during an impending divorce. With rallied support among innkeeper friends, her breast cancer cause and her business are getting a boost.

In the spring of 2008, three creative living innkeepers in Savannah decided to rediscover a more lively, yet authentic Deep South experience in Savannah. Part of their team-of-three commitment is to give back -- to pay it forward from their successes. This means tripling the benefit, multiplying the resources (and sometimes dividing the expense) by three, and kicking up the fun of their 24/7 hospitality businesses by working together.

One breast cancer survivor among the three innkeepers has a personal commitment to generate cancer research dollars. Her passion is to give back to the people who gave her hope as a very young mother fighting breast cancer.

To raise cancer research dollars, Jackie has been decorating whimsical pink hats for shop sales. She and her support group of two innkeepers -- Teresa Jacobson (Azalea Inn and Gardens) and Diane McCray (Green Palm Inn) -- ride pink bikes, partly for breast cancer awareness and, in part, to conserve gas rambling about downtown Savannah. The threesome will be serving up pink desserts at their prominent breakfast inns during October's Breast Cancer Awareness Month. The most conservative of the three will sport new pink tennis shoes.

The trio's newest adventure began in July, planning ahead to stimulate a lot of pay-it-forward momentum in support October Breast Awareness Month. All three inns are donating $5 per night/per room during October 2008, and asking guests to match or add their support to fund cancer research. The funds from Zeigler House Inn, Azalea Inn and Gardens, and Green Palm Inn will support Susan G. Komen for the Cure.
