Review of the Week: Bisland House in Natchez, MS

Bisland House is a historic bed and breakfast located in Natchez, Mississippi. The inn has 98 reviews on BedandBreakfast.com, with an overall perfect rating. It's a Colonial Revival home built circa 1904, though it's outfitted with modern amenities such as in-room satellite TV and free WiFi. According to the innkeepers, "Bisland House is within walking distance to Main Street's Historic district, carriage rides, antebellum homes, restaurants, churches, antique stores and the beautiful Mississippi River bluffs."

The following rave review was left by guests for a stay last month.

"Wonderful Southern hospitality"
We had a lovely one-night stay at Bisland House -- it is a really beautiful house and the hosts, Christine and Byron, delightful. They made us feel very welcome and ensured that we had local maps and all the information we needed regarding restaurants, places to visit, things to do, etc. Afternoon tea was delicious and breakfast the next morning even more so. All the dishes on offer were freshly prepared and cooked and we ate far too much! Our bedroom was beautifully furnished, the bed very comfortable and the sheets amazingly soft. We loved Natchez and its beautiful homes and would have loved to have stayed a little longer and had the time to sit for a while on Christine's upstairs balcony sipping our wine!

Recipe of the Week: Andre's Raspberry Forest Salmon

This unusual salmon recipe comes from Cedar Grove Mansion Inn in Vicksburg, Mississippi. This 33-room country inn is located on five garden-filled acres and overlooks the Mississippi River. The rooms are spread amongst five historic buildings. Dine in the antebellum bed and breakfast's romantic restaurant or try a mint julep at the inn's bar.

Ingredients:

  • 4 six-ounce salmon fillets, skinned & boned
  • 1 3/4 tablespoons fresh dill, minced
  • 1 cup fresh raspberries
  • 1/2 cup butter, melted
  • 8 sheets of phyllo dough

Steps:

1. Rub salmon with fresh dill.
2. Sear salmon on a very hot grill just a few seconds on both sides to give grilled diamond marks.
3. Brush phyllo dough with 1/2 cup of melted butter on both sides. Place 2 sheets together for each piece of salmon. Place 1 salmon in center of each double-sheet of phyllo dough.
4. Top with 1/4 cup of fresh raspberries and gather up the corners of dough to cover the salmon and raspberries. Twist the pastry gently to seal without splitting dough.
5. Bake at 350 degrees for 30 minutes or until golden brown. Serve over hollandaise sauce.
