Recipe of the Week: Forest Berry Parfait

The following recipe for forest berry parfait comes from Barclay Heights Bed & Breakfast at Smythe House in Saugerties, New York. Pictured to the right is innkeeper and chef David Smythe, who serves mostly organic and local breakfasts. Guests enjoy breakfast in a cafe-style dining Room with view of Catskill Mountains. According to him, "This easy, healthy, delicious, and eye-appealing breakfast will wow your breakfast companion."

Servings: 2
Prep time: 10 minutes

Ingredients:

  • 1/2 cup organic vanilla or plain yogurt
  • 6 strawberries
  • 1/2 cup blueberries
  • 1 dozen raspberries
  • 1 dozen blackberries
  • 2 wine glasses or champagne flutes
  • 2 ice tea spoons (silver best)
  • 2 paper doilies (small)
  • 2 elegant small plates


1. Wash all berries gently, reserve for assembly. For garnish, reserve two of each of the best strawberries, raspberries, blackberries and blueberries. Trim the green tops from the remaining strawberries and slice from top to bottom into uniform slices, reserve.

2. In each glass, first place a few of each berry, then add with a tablespoon a layer of yogurt, place a row of sliced strawberries along the inside of the glass, creating a visually appealing ring of strawberry slices. Add a second layer of fresh berries, and top with a second layer of yogurt. The exact order of berries and yogurt is not important; have fun with it and enjoy.

3. Top the parfait with a few carefully placed berries on the yogurt as garnish. Place the doilies on the elegant small plates, place the parfait glasses on the doilies, place a silver ice-tea spoon on the plate next to glass, finish with the addition of a whole strawberry (with green top) next to the spoon.

Recipe of the Week: Fruit and Cheese Pizza

This creative recipe comes courtesy of Sutherland House Bed & Breakfast in Canadaigua, New York. Once a haunted house, this B&B is an 1885 renovated Victorian home that sits on 5 private and peaceful acres in the beautiful Finger Lakes region. It is surrounded by rolling farmland and trees. Enjoy this sweet treat for a snack or dessert!

Ingredients:

  • One package (20 ounces) sugar cookie dough
  • 8 ounces cream cheese, at room temperature
  • 1/3 cup sugar
  • 1/2 teaspoons vanilla
  • 4 cups of fresh fruit (suggested fruits: grapes, seedless and cut in half; mandarin oranges; banana slices; kiwi; blueberries; strawberries; and raspberries)
  • 1/4 cup apricot preserves
  • 3 tablespoons brandy

Steps:

1. Preheat oven to 375 degrees.
2. Slice the cold cookie dough into 1/4-inch-thick rounds and arrange on a slightly oiled 12-inch pizza pan, overlapping slightly until the pan is covered completely. Press the dough together to seal.
3. Bake the dough rounds for 10 minutes or until lightly browned. This is very important to really cook the shell. Cool.
4. Combine the cream cheese, sugar, and vanilla, and spread evenly over the cookie crust.
5. Arrange the fruit in a circular pattern over the filling. Start at the outer edge.
6. In a small saucepan, melt the preserves and brandy and brush this over the fruit. Chill for 1 hour.
7. Cut the pizza into wedges to serve.
