Recipe of the Week: Thomas Welsh Shortbread Cookies

Save time in the kitchen this holiday season with this simple recipe for shortbread cookies. The recipe comes from John Wesley Inn in Cape May, New Jersey. The inn is centrally located in the Historic District and is only half a block from the beach. Enjoy!

Thomas Welsh Shortbread Cookies

Prep time: 15 minutes
Serves: 10

Ingredients:

  • 1/2 lb. butter
  • 2/3 cup sugar
  • 2 1/4 cups flour
  • 1/8 cup cornstarch

Steps:

1. Cream the butter and sugar. Add the flour and cornstarch and blend until smooth. Knead the dough for 10 minutes.
2. Roll out the dough into a rectangular shape, about 1/4 to 1/2 inch thick. Cut into desired shape (small triangles or rectangles). Score all cookies with a fork.
3. Bake at 350F degrees for 12 minutes, then 300 degrees for 12 minutes or until they are very slightly golden. Watch that they don't get too brown.
