Recipe of the Week: Strawberry Ooey Gooey Bars

This sweet recipe comes courtesy of the Hattie May Inn in Fort Worth, Texas, which as an overall perfect rating on BedandBreakfast.com. The restored Victorian Queen Anneis a registered Texas landmark. Guests are treated to free afternoon refreshments in addition to a full country breakfast. Enjoy this dessert!

Prep time:  45 minutes
Serves:  12

Ingredients:

  • 1 strawberry cake mix
  • 1 stick butter
  • 3.5 cups powdered sugar
  • 8 oz. softened cream cheese
  • 3 eggs

Steps:

1. Preheat oven to 350F degrees. Grease and lightly flour 9x13 pan.
2. Mix dry cake mix, butter, and one egg. Press into pan.
3. Then mix cream cheese, powdered sugar, and two eggs with electric mixer. Pour over pressed mixture in pan.
4. Bake for 30-35 minutes until golden brown.

Variations: Substitute Devil's Food cake mix and add chocolate or butterscotch chips to cream cheese mixture. For golden bars, substitute yellow cake mix.

Recipe of the Week: Carbonnades Flamandes (Beef Braised in Beer)

This hearty recipe comes from Kelumac Christmas Tree Farm Bed & Breakfast in Bryan, Texas.

From the innkeeper: In Flandres, most meats are served with fried potatoes, and carbonnades are no exception, but you could also serve them with steamed or mashed potatoes. This dish is an everyday dish both in Belgium and France.

Prep Time  4 hours
Serves:  6

Ingredients:

  • 3 3/4 lb. beef suitable for braising (round or chuck steak)
  • 1 sprig thyme ( bouqet garni)
  • 6 sprigs parsley (bouquet garni)
  • 1 bay leaf (bouquet garni)
  • salt and freshly ground pepper
  • 1 slice whole grain country style bread
  • 2 tablespoons strong mustard
  • 1 tablespoon vegetable oil
  • 1 oz. butter
  • 12 oz. thinly sliced onions
  • 1 tablespoon firmly packed brown sugar
  • 2 tablespoon red wine vinegar
  • 16 fl. oz. dark beer

Steps:

  1. Slice meat into 1/2x2x21/2 inch rectangles, season with salt and pepper. Tie the herbs of the bouquet garni together. Spread mustard on bread.
  2. Preheat oven 350F. (180C.) Heat oil and quickly brown meat over high heat, set aside. Melt butter in saute pan add onions, cook until golden brown. Add the brown sugar cook until lightly carmelized, then pour in vinegar and evaporate it over high heat.
  3. Arrange alternate layers of meat and onions in ovenproof 4-quart casserole, inserting the slice of bread and the bouquet garni in the middle. Pour the beer in a saute pan and heat it over high heat. Transfer it to casserole adding more to cover meat. Cover and braise in oven for 4 hours without disturbing.
  4. Transfer the meat to a shallow dish and keep warm. Puree the bread, onions and cooking juices through the fine holes of a food mill or food processor to make a smooth sauce. Reheat the sauce over high heat, then pour over the meat. Serve immediately.
