Mountain Top Inn & Resort is a B&B in Chittenden, Vermont. The inn is surrounded by the Green Mountain National Forest and is set on 350 acres. They offer plentiful outdoor activities, including an Equestrian Center and Nordic Ski & Snowshoe Center.

The inn has 30 lodge rooms, plus five stand-alone cabins and chalets. Below is a photo of The Jewel at Meadow's Edge, the most luxurious private chalet with spectacular views of the lake, mountains and meadow.

Review of the Week: Alexandra B&B Inn in Bennington, VT

Alexandra B&B Inn is an 1859 inn lcoated near historic downtown Bennington. The B&B has an overall perfect rating on BedandBreakfast.com. Below is a review left on BedandBreakfast.com from a traveler who stayed there last month.

What a Wonderful Find
"We had such a wonderful weekend at the Alexandra B&B Inn. Daniel and Claudia, our host and hostess, are such a delightful couple... helpful, friendly, warm, they made our stay feel more as if we were in someone's home, and less as if we were in a hotel! We chatted about all kinds of common interests...

Breakfast was outstanding. One morning it was blackberry pancakes, one morning a lovely omelet - just delicious. Every morning yogurt, fruit juice, and muffins or cake, made on the premises. We found ourselves sitting there with another cup of coffee, just to watch the birds, or chat on with Daniel and Claudia. We had a great time, and wholeheartedly recommend this warm, friendly, quaint B&B. We will certainly be back!"

Recipe of the Week: Goat Cheese Popovers

The following recipe is from White Rocks Inn Bed and Breakfast in Wallingford, Vermont. The inn is located on 18 pastoral acres and features a hiking trail with great views.

Goat Cheese Popovers

Prep time: 1 hour
Serves: 12

Ingredients:

  • 4 oz. herbed chevre cheese, cut into 24 pieces
  • 6 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • pinch of nutmeg
  • 2 cups milk
  • 1/2 cup heavy cream

Steps:

1. Preheat oven to 400F degrees. For this recipe, you will need miniature popover tins (24) or medium muffin tins. Brush mini-popover pan cups with oil and place in oven to get hot.
2. Place eggs, flour, salt, pepper, and nutmeg in blender and blend about 10 seconds until well-combined. Scrape down sides. With blender running, slowly pour in milk and cream and blend until smooth.
3. Remove tins from oven and fill each half-way with batter. Place a piece of cheese in the center of each cup and pour remaining batter to fill each cup 2/3 full.
4. Bake popovers until puffed and golden, 40-50 minutes. Serve hot.

Rose On The Road - Weston, VT

One of my favorite inns in Vermont is The Inn at Weston. We love the location, the inn is beautiful and the inn’s restaurant is outstanding. The memorable meals are enhanced by the live piano music that accompanies dinner. The restaurant's bar is cozy and has a separate pub menu for casual dining.

Innkeepers Bob and Linda Aldrich and their staff are dedicated to making your stay memorable. Afternoon refreshments are served in the library and guest rooms are beautifully appointed, most with fireplaces. The inn’s greenhouse holds one of, if not the largest, private collection of orchid plants in the northeast, and many of the plants adorn the inn and guest rooms.

Since I recently received a newsletter from The Inn at Weston, I wanted to share that they will be hosting two weekend seminars in January and February on growing orchids in a home environment.The package includes lodging, a welcome reception, dinner for two and breakfast each morning in addition to the information seminar and an orchid plant to take home.Click here for dates and more information on this package. The town of Weston is lovely, and within walking distance of the inn is the famous Vermont Country Store  as well as The Weston Village Storewhere you can purchase not only cheese and maple syrup but wonderful Christmas collectibles. I found a retired Dept. 56 Village piece here that I had been searching for. In addition to several galleries in town, during the season you can also enjoy the shows presented at the notable Weston Playhouse

In addition to the many year-round outdoor activities the area has to offer, from skiing to fishing, hiking to canoeing, shopaholics will enjoy the great outlet shopping in nearby Manchester. Great after-Christmas sales! Have fun - Rose
