A Diamond Collection Property Hosts a Unique Guest

Beth Colt, innkeeper at the Woods Hole Inn on Cape Cod, posted a photo on her Facebook page last year of a red chair on a frozen pond behind her house. That photo and a later one shot by California photographer Julie Ann Cromer were beautiful images were enjoyed by many. So this fall, the famous Red Chair is crisscrossing New England, staying at inns and B&Bs.

World travelers themselves, innkeepers Brad and Ilja Chapman of Adair Country Inn & Restaurant in Bethlehem, New Hampshire wanted to participate. They welcomed the well-traveled Red Chair to their intimate and romantic inn for a late October visit (October 22-25).

The innkeepers took the chair all over town for sightseeing and fun activities, from visiting local restaurants to a Christmas tree fam to hanging out in the inn's own kitchen for breakfast.

After a fun visit at the Adair Country Inn, the Red Chair headed off to the Inn at the Round Barn Farm in Vermont. All three of those participating properties are members of the BedandBreakfast.com Diamond Collection.

Recipe of the Week: Amy’s Perfect Amaretto Almond Pancake

Bored with breakfast? Try this tasty recipe from the innkeepers at Forty Putney, a Diamond Collection B&B in Brattleboro, Vermont. All guests here enjoy a gourmet two-course breakfast. Even better, the hip innkeepers are self-professed beer geeks, and the inn has its own on-site pub that serves over 30 local craft beers.

Main ingredients:

1 C - All-purpose bleached flour (softer than unbleached flour)
2 t Sugar
½ t Salt
½ t powder
¾ c Buttermilk
¼ c Milk
1 Large egg
2 T Unsalted butter melted
1 t Vanilla extract
¾ C Sliced almonds
1 T Amaretto

Topping ingredients:
¼ t Almond extract
½ C Vermont medium amber grade A maple syrup
¼ C Sliced almonds

Steps:

1. Heat a large non-stick skillet or griddle to 375 degrees.

2. Mix flour, sugar, salt, baking powder, sliced almonds and baking soda in a medium bowl. Microwave buttermilk and milk in a bowl to get to room temperature. Whisk in egg, butter and vanilla.

3. Add wet ingredients to dry ingredients until just barely mixed to the point of no lumps.

4. Pour batter ¼ cup at a time. Work in batches to avoid overcrowding. When pancake bottoms are golden brown and the tops start to bubble (2-3 minutes) flip the pancake and cook until golden brown on the remaining side.

5. Combine almond extract and syrup and microwave for 45 seconds. Serve hot. Garnish pancakes with sliced almonds.

Review of the Week: West Hill House in Warren, VT

Located in a historic 1850's home in Warren, Vermont, West Hill House is a wonderful getaway spot year-round. The Diamond Collection inn is extremely close to Sugarbush skiing, golfing, tennis, and is adjacent to the Robert Trent Jones, Sr. championship golf course.

The following review was left by a traveler in July 2011 and was perfectly rated:

"Great spot for skiers, golf and R&R"
I visited West Hill House for the second time, this time in the summer. It was so gorgeous, with all the gardens in full bloom! Last time I was there it was in the winter, when this inn makes the most perfect place for a ski getaway! Winter or summer, it's fabulous. Why? 1) Great rooms - many built into the eves or accessed by their own private staircases. 2) Tons of places for R&R - four ponds, garden paths, a gazebo built from birch trees on the property, a firepit, even a pond-side hammock! 3) Tons of common space - a large living room, a sun room with the world's most comfortable leather couch, a deck with an awning. 4) Incredible breakfasts followed by a breakfast dessert. Perfect way to start the day. 5) Susan and Peter are so fun, lively and interesting. Great hosts! I could go on and on, but there are the top 5 reasons to stay at West Hill House!

Recipe of the Week: Nat's Sour Cream Coffee Cake

The following recipe comes from Swift House Inn, a Diamond Collection member in Middlebury, Vermont. The 20-room former governor's mansion is a wonderful place for a New England getaway.

Nat's Sour Cream Coffee Cake

Prep time:  1+ hour

Ingredients:

  • 2 sticks of butter
  • 2 cups sugar
  • 2 eggs beaten
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 cups sour cream
  • 1 tablespoon vanilla
  • 3/4 cup walnuts or pecans chopped
  • 1 tablespoon cinnamon
  • 3/4 cup sugar

Steps:

1. Preheat oven to 350F degrees. Grease and flour bundt pan.
2. Cream the butter and 2 cups of sugar. Add eggs, sour cream, and vanilla. Sift in flour, baking powder and salt. Fold mixture together gently until just mixed. Do not overbeat.
3. In a separate bowl mix together nuts, 3/4 cup sugar and cinnamon.
4. Pour 1/3 of the batter into bundt pan then sprinkle with 1/2 the nut mixture. Pour in another 1/3 of the batter and top with remaining nut mixture. Finish with the remaining 1/3 of the batter.
5. Bake for 60 minutes. Cool completely before removing. May be wrapped and frozen.
