Our January award this year is a brand new category: Top 10 Inns for Finding Zen. Over the years, we have learned about so many incredible B&Bs that soothe the soul that we decided it was time to honor some of the best. A Blast from My Innkeeping Past—Blueberry Muffins

There was a time when muffins, pancakes, and quiches were my everyday, and breakfast was a big part of my life when I was an innkeeper for a year and a half . What I found to be most exciting and daunting was what to make for breakfast each morning. You can never please everyone, but you can make blueberry muffins. While they may not be everyone's first choice, I have yet to run into someone that doesn't enjoy one homemade and fresh from the oven. These muffins have a balance of lemony sweetness and are chock-full of blueberries in each bite.

I made 14 muffins to have a few extra, but if you make the standard 12 they will have lovely domed tops.

While I chose to glaze these muffins, you could top or not top them with whatever tickles your fancy. I always love a nice crumbly streusel topping, but you could also just sprinkle them with sugar and call it a day.


Lemon Blueberry Muffins
Liberally adapted from Joy the Baker

Ingredients:

1 stick of unsalted butter (room temperature)
3/4 cup granulated sugar
1/3 cup milk
2 large eggs
1 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
the zest of 1 lemon
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 to 1 1/2 cups of fresh blueberries


Steps:

1. Preheat your oven to 350 degrees F.  Line a muffin pan with paper or foil liners and set aside.

2. In a medium bowl, cream the butter and sugar together adding the eggs one at a time. Once thoroughly mixed, add the milk, vanilla, almond extract, and lemon zest mixing until combined. 

3. Whisk together flour, baking powder, and salt in a medium bowl.  Add milk mixture to the flour mixture and stir to combine.  When the flour is almost fully mixed (about 95% there), fold in the blueberries. Divide batter among prepared muffin cups, you should get 12 muffins.

4. Bake muffins for 18 to 20 minutes until golden and crisp and a skewer inserted into the center of a muffin comes out clean.  Cool muffins in the pan for 15 minutes before removing. 

Lemon Glaze

Ingredients:

1 Lemon
1/8 tsp. almond extract
1/2 - 1 cup of confectioner's sugar
*This recipe is not precise, as you will have to judge the consistency from the amount juice your lemon gives.

Steps:

Juice your zested lemon into a small bowl, add the almond extract and stir. Add the confectioner's sugar, starting with 1/2 a cup, then adding a tablespoon at a time, stirring to combine with each addition. When your glaze is thickened, but drips in ribbons from your spoon, drizzle over the muffins.

If you wanted a heftier ratio of glaze:muffin, double the recipe and dunk the muffins.

Top 10 Holiday Inns of 2012

Earlier this week, we announced the winners of our second annual Top 10 Holiday B&Bs award. This December award recognizes 10 B&Bs in the United States with the most festive, over-the-top holiday decorations, meals, and events. Get pampered and enjoy the holdiay season away from home at these inns!

The winners have offerings such as a romantic sleigh ride, a New Year's Eve party with jazz musicians, a holiday cooking class, and a Christmas light show on a lake.

Holiday Traditions Around the World

While traditions are an important part of the holiday season, this year, expand your horizons and learn how other cultures celebrate the holidays. Witnessing traditions from around the globe — from Christmas markets to holiday decorations — will bring a festive atmosphere to any trip. It’s also a perfect excuse to spend quality time with family and friends.


London, England

Many people love to travel during the holidays for one simple reason: extravagant decorations. One of the best cities for holiday decorations is London. Expect holly, mistletoe, and Christmas trees across the city, especially in places like beautiful Trafalgar Square. Experience a more intimate side of the city by choosing a London B&B for your accommodation.

Prague, Czech Republic
Travel to Prague during the holidays to experience one of the city’s oldest and most beloved traditions: the Christmas markets. The main squares of the city are home to these atmospheric, outdoor markets selling everything from handmade arts and crafts to spicy mulled wine. These markets are also known for their hot, delicious street food. Expect choral performances and a big Christmas tree in the Old Town Square as well. Leave it to the Irish to create one of the most festive atmospheres in Europe leading up to Christmas. The cold weather is ideal for squeezing into a historic pub for a pint of Guinness while Christmas music plays in the background. Get to know how the locals celebrate by choosing an intimate city center bed and breakfast in Dublin.

Madrid, Spain

Madrid is home to some of the most impressive light displays on the continent. Escape the stress of the holidays for a relaxed trip to Madrid, where you can fill your days browsing the Christmas Market in Plaza Mayor, checking out the famous nativity scenes at local churches, and ice skating at Retiro Park. Madrid is also a fabulous place to do some Christmas shopping at well-decorated department stores like El Corte Ingles. Witness even more local traditions by staying in a central bed and breakfast.

Back at home, it can be so easy to get wrapped up in the stress of the holidays. Escape this year with a trip abroad to experience how others make the season bright.

We're Participating in Passports With Purpose!

Every year since 2008, travel bloggers have banded together to participate in Passports With Purpose. The founders select one charity around the world each year. Then each travel blogger finds a business willing to donate something; it can be goods (usually travel-related), services, or travel experiences. The items are all put up for auction to the general public, where people pay $10 per bid. The proceeds always go to an excellent cause; this year, it's building wells in Haiti.

The donation amount has greatly increased over the years. Two years ago, they raised $60,000 ($10,000 over their goal) to help house 25 families in India. In 2011, they raised $90,000 (also $10,000 over their goal) to build two libraries in Zambia. This year, the goal is to reach $100,000.
