Recipe of the Week: Chocolate Sundae Pudding Cake

This sinful recipe comes from Rocky Mountain Lodge & Cabins in Cascade, Colorado. This rustic lodge is located at the base of Pike's Peak, and in addition to having six guest rooms, there is a separate cottage and a stand-alone cabin you can stay in for additional privacy. Every breakfast here has three courses, and one of the courses is always a dessert! One of their famous breakfasts and their dining table is pictured to the right.

The inn makes delicious desserts that aren't just for breakfast, and here is a recipe of one of them!

Chocolate Sundae Pudding Cake

Prep time:  20 minutes
Serves:  6

Ingredients:

  • 1 cup flour
  • 2/3 cup granulated sugar
  • 2 Tbsp. unsweetened cocoa powder
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup milk
  • 1/2 cup chopped nuts
  • 2 Tbsp. butter, melted
  • 1 tsp. vanilla
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 3 Tbsp. unsweetened cocoa powder
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 1 cup boiling water
  • French vanilla ice cream

Steps:

1. Grease four to six 2-cup ramekins, or a 2-quart casserole dish. Set aside. Preheat oven to 350F degrees.
2. In a large mixing bowl, stir together the flour, 2/3 cup granulated sugar, 2 Tbsp. cocoa powder, baking powder, and 1/4 tsp. salt. Set aside.
3. In a small mixing bowl stir together the milk, nuts, melted butter, and 1 tsp. vanilla. Add to the dry ingredients and stir to combine. Pour into ramekins or casserole dish.
4. In another bowl, stir together the brown sugar, 1/4 cup granulated sugar, 3 Tbsp. cocoa powder, 1 tsp. vanilla, and 1/8 tsp. salt. Sprinkle the mixture evenly over the batter. Pour the boiling water evenly over each ramekin, or casserole dish.
5. Bake 30 minutes. Top with vanilla ice cream and serve immediately.
