Recipe of the Week: Shoofly pie

This following dessert recipe comes from Bird-in-Hand Village Inn & Suites in Bird In Hand, Pennsylvania. It's easy to make and full of sweet goodness! The 18th-century country inn is located in the heart of the rolling farmlands of Lancaster County, Pennsylvania Dutch Country. There are 24 individually-decorated guest rooms with various amenities including fireplaces, whirlpools, kitchenettes, and sitting rooms.

Servings: 12
Prep time: 70 minutes

Ingredients:

  • 1 cup molasses
  • 1/2 cup brown sugar
  • 2 eggs, beaten
  • 1 cup hot water
  • 1 teaspoon baking soda, dissolved in hot water
  • 2 cups flour
  • 1/3 cup shortening
  • 3/4 cup brown sugar
  • Two 8" pie shells


1. Mix first 5 ingredients together adding baking soda last. Pour into pie shell.
2. Mix crumbs together (flour, shortening, & brown sugar) with hands and sprinkle on top.
3. Bake at 400F for 10 minutes, then 350 for 50 minutes.
